Jellied Cranberry (Salad or jelled sauce)

From Rosemary Schoelen in “Tastefully Yours, a Recipe Collection from Dietitians”

Makes 3 cups.

1 lb. fresh cranberries
1 cup orange juice
1-1/4 cups sugar
1 small (3-oz.) box red cherry or strawberry gelatin
Lettuce and nuts, if desired
Sour cream, if desired for garnish
Fresh lemon or orange peel (zest) for garnish


1. Wash cranberries and drain. In saucepan, combine berries, orange juice and sugar. Bring to a boil and continue boiling gently for 10 minutes or until cranberries are tender.

2. Add dry gelatin and stir until dissolved. Pour into a 4-cup mold and chill until set.

3. For salad: Serve a slice of Jellied Cranberry on lettuce, garnished with nuts, topped with sour cream and a swirl or strips of fresh lemon or orange peel OR as a jelled sauce with baked turkey.
