Cajun-Roasted Pumpkin Seeds

Serves 4.
1 pumpkin
2 tbls. butter, melted
Cajun Creole all-purpose seasoning
Red or black pepper
1. Scoop the seeds out of a fresh pumpkin. Rinse off the pulp and allow to air dry for 2 to 3 hours.
2. Toss the dried seeds with melted butter.
3. Line a cookie sheet with aluminum foil. Spray it with olive oil cooking spray or vegetable shortening cooking spray.
4. Place seeds in a single layer on the cookie sheet. Sprinkle with Cajun Creole seasoning and red or black pepper.
5. Bake at 275 degrees until golden brown (approximately 15 minutes). Eat as a snack or as a salad topping.
