Prize-winning panini perks up weekends
I saw this recipe recently and decided to make it. After all, this recipe won the $1 million top prize in the 2002 Pillsbury Bake-Off.
The sandwiches, a combination of chicken, spinach, sautéed onions, garlic/mayo dressing and provolone cheese, take a little time to prepare, but they’re worth it.
The recipe calls for cooked frozen spinach, but I used raw spinach when I tested the recipe. Either is fine.
